Every now and again I get the urge to bake a cake for no reason at all.
With a bag of pears going slightly soft in the fruit bowl I decided to put them to good use and make Nigel Slater’s Pear and Blueberry Cake. With all that fruit it must be healthy, right?
The recipe appears in Nigel Slater’s Kitchen Diaries, which is my all time favourite recipe book. A similar one can be accessed online via BBC Good Food.
It’s a really simple cake to make as it uses a basic sponge recipe, you’re likely to have the ingredients in your store cupboard. The fruit is scattered over the top just before baking, with a spoon or two of sugar for extra crunch. I guess you could use different fruits if you have any that need using up – mmm, maybe apple and blackberry…
Perfect preparation for the weekend.
It may not be the most beautiful cake to look at but I can assure you, it’s delicious!
